For this especially delicate matcha chocolate, Gmeiner uses premium matcha tea from Kyoto, made from carefully selected leaves of the early spring harvest. The tea bushes are shaded for about three weeks before picking, which boosts chlorophyll production and reduces bitterness.
This traditional processing gives the matcha its characteristic fresh aroma and gentle sweetness, which blends beautifully with the white chocolate’s 36% cocoa content to create a pleasantly balanced flavor experience.
